The optimal temperature range for high-heat cooking is between 450 and 550 degrees Fahrenheit, at which point you should be able to keep your palm around five inches over the cooking grate for two to four seconds. It is not yet time to start cooking if you are unable to maintain contact with the surface for at least two seconds.
